This is a super ice cream made from just fruit (and a little flavouring)
in the form of vanilla. Its a healthy dessert or treat and a delicious alternative to bought ice pops that have a long list of ingredients, mainly made with sugar. It is one way of hydrating children on hot summer days.
There are similar recipes like this, made with just bananas but this recipe is great for those who don’t really like the taste of bananas. Adding strawberries obviously adds another flavour and also gives it a richer colour. It is a super simple recipe with just 3 ingredients, 3 steps and requires no special equipment to make, just a freezer.
20 strawberries, washed with green parts removed and chopped
2 bananas, peeled and sliced
1 teasp. vanilla extract*
1 Combine three-quarters of the chopped strawberries with the banana slices. Place in the freezer for 3-4 hours. Place the remaining chopped strawberries in the fridge.
2 Transfer the frozen fruit to a food processor. Whizz for five minutes or until creamy. Stir in the vanilla extract and reserved strawberries.
3 Serve immediately as soft serve ice cream. Alternatively freeze in an airtight container for 2-3 hours and allow to sit at room temperature for 2-3 minutes before scooping and serving.
For a speedier recipe, have the prepared strawberries and bananas already frozen, ready for use in the food preocessor.
* I use vanilla extract in this recipe as it has a stronger flavour than vanilla essence. Of course you can use vanilla bean paste or vanilla pod either. Use the same amount of vanilla bean paste as vanilla extract. Alternatively use 1/3 of a whole vanilla bean in this recipe.
