Tell me a little  about yourself! Â
Hi I’m Chris. Originally from the UK, I now live in Hong Kong and I am a Secondary school Food, Nutrition and Hospitality teacher. I started cooking with my Mum from a young age, and really became passionate about food in my teenage years. This led me to both further education to use all my skills and knowledge to inspire the younger generation to get cooking and eat healthily. When my daughter was about 18 months old, she really showed an interest in being in the kitchen, so we started regular cooking sessions and then this grew into our Evie Bakes and Makes. Also we have now published our Evie Bakes recipe book.

Why do you recommend this recipe?
I recommend this recipe as I have made many varieties of muffins over the years and this one of our favourites. It is great for little ones to practice chopping, mixing and dividing out the mixture into muffin cases. Enjoyed by children and adults alike and you can experiment with different berries and fruits.

What do you find is the biggest challenge in growing happy, healthy eaters?Â
The biggest challenge when cooking with children is accepting that there will be mess, this puts some people off, but the benefits definitely outweigh the time it takes to clean up.

What’s the one thing you find works with your family to help with this challenge?Â
The challenge when cooking for little ones is that their tastes change so often. One day broccoli is their favourite and the next day they refuse to eat it. I find the best way round this is to just serve the same as what the adults are eating, with a few additional veggies and fruits on the side, so that they can pick at what they fancy that day, This does mean that there is often quite a lot of leftovers, but these can always be reheated the next day, composted or eaten by a parent.

Banana Berry Muffins
It’s easy to make, delicious and healthy

Ingredients
1 banana mashed/chopped
75g raspberry/75g blueberry – plus extra for the top
2 eggs
100ml olive oil
1tsp vanilla essence/extract
2tbsp maple syrup
50g brown sugar
50g almond or peanut butter
125g SR flour/125g wholemeal flour
10g baking powder
Method
- All you have to do is mix everything together until it is combined and still a bit lumpy,
- Divide between your muffin cases
- Bake @180C for 15-18min
