These are completely free of added sugar
naturally sweetened with apples, sultanas and cinnamon. These flapjacks contain a great carbohydrate (oats), as well as protein and fibre (ground almonds and flaxseeds); as well as fruit (apple sauce) which are a great option for fussy eaters. They are also a delicious option for breakfast, lunch boxes, and healthy snacks.
Ingredients
- 2 medium eating apples
- 1 tbsp water
- 120 ml oil (I used melted coconut oil)
- 50 g ground almonds
- 200 g oats (can be gluten free oats)
- 1 tbsp milled flaxseed
- 1 tsp ground cinnamon
- 60 g sultanas (or dried fruit of your choice, or omit if you wish)
Instructions
-
Grease and line a 20cm square baking tin with baking paper. Pre-heat the oven to 180°C (fan).
-
Peel, core and chop the apples. Place in a saucepan with 1 tbsp water. Cook over a low heat for a few minutes, until soft and breaking up. Stir occasionally to avoid sticking.
-
Stir in the remaining ingredients, mix thoroughly and transfer to the prepared tin.
-
Press down until the surface is even and bake in the oven for 25 minutes until golden on top.
-
Remove from the oven and allow to cool in the tin before cutting into squares.
This is recipe is courtesy of Sneaky Veg, but slightly adapted as I used eating apples instead of cooking apples for a sweeter taste.
