Sugar free flapjacks

These are completely free of added sugar

naturally sweetened with apples, sultanas and cinnamon. These flapjacks contain a great carbohydrate (oats), as well as protein and fibre (ground almonds and flaxseeds); as well as  fruit (apple sauce) which are a great option for fussy eaters. They are also a delicious option for breakfast, lunch boxes, and healthy snacks.

  • 2 medium eating apples
  • 1 tbsp water
  • 120 ml oil (I used melted coconut oil)
  • 50 g ground almonds
  • 200 g oats (can be gluten free oats)
  • 1 tbsp milled flaxseed
  • 1 tsp ground cinnamon
  • 60 g sultanas (or dried fruit of your choice, or omit if you wish)

  1. Grease and line a 20cm square baking tin with baking paper. Pre-heat the oven to 180°C (fan).
  2. Peel, core and chop the apples. Place in a saucepan with 1 tbsp water. Cook over a low heat for a few minutes, until soft and breaking up. Stir occasionally to avoid sticking.
  3. Stir in the remaining ingredients, mix thoroughly and transfer to the prepared tin.
  4. Press down until the surface is even and bake in the oven for 25 minutes until golden on top.
  5. Remove from the oven and allow to cool in the tin before cutting into squares.
This is recipe is courtesy of Sneaky Veg, but slightly adapted as I used eating apples instead of cooking apples for a sweeter taste.
